Reber Confectionery's success story began in 1865 when Master Confectioner Peter Reber opened a Confectionery Cafe in Munich.
This wonderful world of sweet treats soon became a popular meeting place for the who’s who of Munich. Life was good for the ladies and gentlemen of the upper classes, who enjoyed homemade cakes and a “Schalerl” of coffee.
In 1938, the family moved their headquarters – Café Reber – to downtown Bad Reichenhall in Bavaria, Germany. Here also, within a very short period of time, the Café evolved into a meeting place – for the lovers of a little special indulgence.
It has been over 145 years since the first Reber Café was opened and during that time the company, which is still owned and operated by the family today, has made a name for itself among confectionery gourmets – and not only because of its small delicious treat named the Genuine Reber Mozart-Kugeln™.
When it comes to the main ingredients – chocolate, nougat, and Marzipan – this specifically means:
Reber chocolate varieties are produced using their own family recipes that have been handed down from generation to generation and give every fine Reber specialty its crunchy outer shell. The dark chocolate has an extremely high amount of cocoa (at least 60%), and the one-of-a-kind Reber milk chocolate is comprised of at least 35% cocoa.
The quality of Reber marzipan is guaranteed thanks to the special manufacturing process and the select raw ingredients they use. In the traditional Lübeck process, which has been in use since 1904, aromatic Californian almonds and sugar are finely ground together using a granite mill and is subsequently roasted in open, rotating copper cauldrons. This step-by-step production process fits with the company’s slogan “All the Time in the World.” Reber marzipan is then refined using a splash of high-quality rum alcohol to give it the perfect flavour. As a result, the Reber gourmet marzipan used in the Genuine Reber Mozart-KugelnTM contains 36% almonds.
Reber gourmet nougat is primarily made from nuts or almonds. The Levant hazelnuts come from around the Mediterranean and ensure that the nougat is always of the utmost quality and has an outstanding taste. The nuts’ roasting level and the amount of chocolate vary depending on the recipe and are the key factor which determines the nougat’s aroma and colouration. Finely grinding and conching all of the ingredients gives the nougat its velvety consistency and one-of-a-kind taste.
Reber specialties are only refined using the highest quality natural products, such as fresh, best-quality butter, fresh Alpine cream, fresh yogurt from Alpine farmers, and high-quality honey.
